1/4 cup chopped onion 2 T. butter 2 T. flour 1/4 tsp. salt 1/8 tsp. pepper 1 1/4 cups milk 3/4 cup shredded cheese 3-4 medium potatoes, thinly sliced
In saucepan cook onion in butter until tender.Stir in flour, salt, and pepper. Add milk; cook until thick; remove from heat, stir in cheese until melted. Place half potatoes in greased 1 quart casserole; cover with half of sauce, repeat. Bake covered for 35 minutes; uncover, bake 30 minutes more or until tender at 350º.
