1 3/4 cups flour
1/3 cup sugar
2 tsp. baking powder
1/4 tsp. salt
1 beaten egg
1/2 cup milk
1/4 cup oil
3/4 cup mashed bananas
1/2 cup chopped walnuts
TOPPING (optional)
3 T. flour
3 T. brown sugar
1/4 tsp. cinnamon
2 T. butter
2 T. chopped nuts

Grease muffin pan (do not use paper baking cups).
Heat oven to 400º. Combine flour, sugar, baking powder, and salt; set aside. In separate bowl mix bananas, nuts, egg, milk, and oil; add all at once to flour mixture.Stir until moist, will be lumpy. Fill muffin cups 2/3rds full. Top with Streusel topping.
Bake 18-20 minutes. Best served warm.
Topping:
combine dry ingredients, cut into butter until it looks like small crumbs; mix with nuts.

Make muffins blueberry: use 3/4 cup berries and 3/4 cup milk. Paper liners work with these.
