Leftover roast beef and vegetables
Potatoes and rice (if cooked w/roast)
1 pkg large flour tortillas
1 qt fresh salsa
1 lb cheese of your choice

For Sunday dinner with the family-Prepare in bulk (at my house we always had a roast beef with rice or potatoes,, carrots and salad. Roasts do not require a lot of attention and the veggies can cook in same pot.)

We loved gravy so I always made a corn starch gravy containing the following: bean sprouts, celery, onions, Brussels sprouts and any other vegetable I could toss in.

Chop up the left over roast along with the veggies and potatoes or rice and roll up in flour tortillas and smother with salsa and cheese. This is where you can be really creative and include additional fresh vegetables. They will never know it. The salsa and cheese rolled in the tortilla covers the veggies. Wrap individually and freeze for future meals.

During the week, when it gets really hectic, the family can toss the frozen jumbo burrito in the microwave and have a healthy, hearty meal.

As the mother of three children, very active twin boys and one petite little girl, all involved in every sport imaginable, including boy scouts, swim team and junior lifeguards, basketball, football, AYES soccer, we were always on the go.

I would be on the freeway on my car phone telling the boys to be ready so I could pick them up and get them to their destination.

This is my recipe for a healthy meal chocked full of veggies, protein and whatever else you want to toss in.
