1 8 oz. Can Red Sockeye Salmon
2 Tbs. Butter Melted
3 Egg Yolks
1 tsp. Salt
1/8 tsp Pepper
1 Cup Scalded Milk
2 Tbsp. lemon Juice
2 tsp. Chopped parsley
1 Cup Bread Crumbs
3 Stiffly Beaten Egg Whites

Directions:
Directions:
Drain salmon and remove the skin and bone from the salmon. Add melted butter and beaten egg yolks, seasoning, milk and bread crumbs. Mix. Then add the well beaten egg white's folding them in. Pour into a 2 1/2 quart greased casserole pan. Bake at 325º for 45 minutes
