1 1/2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sugar
1/4 cup softened butter or margarine
2/3 cup milk
1 teaspoon vanilla extract
1/2 teaspoon grated lemon peel
1 egg
1 cup blueberries (fresh or frozen)
3 tablespoons sugar
1 teaspoon grated lemon peel

Directions:

Lightly mix the blueberries, 3 tablespoons of sugar and the 1 teaspoon of grated lemon peel. Set aside.
Mix together the flour, baking powder, salt and 3/4 cup of sugar. Add the softened butter, milk and vanilla. Beat with mixer on medium for 3 minutes. Add the egg and beat another 2 minutes. Stir in by hand the 1/2 teaspoon of grated lemon peel. Pour the batter into a greased 8 x 8 inch baking pan. Sprinkle the blueberries, sugar and lemon peel mixture evenly over the batter. Bake at 350º for 40 to 45 minutes, or until lightly browned. May be served warm or cooled. If desired, dust with confectioner’s sugar before serving, or drizzle with a glaze made with confectioner’s sugar, a few drops of lemon extract and water. Note: This recipe can easily be doubled and baked in a 9 x 13 inch pan.
