6oz plain flour
4 oz butter
2oz caster sugar

Raspberry jam
4oz self raising flour
1 heaped teaspoon baking powder
4 oz caster sugar
4oz butter
1 extra large egg
1 egg yolk
1 teaspoon almond essence
1oz flaked almonds

Bake pastry base in a 10x8 flat tin for 8 minutes @ 190 c - then spread with jam
Beat topping ingredients until smooth spread over base
Sprinkle with almonds & bake for 20 minutes

Cool in tin
