2 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/4 c. brown sugar
1/2 c. oil
1 egg
1 tsp. vanilla
1 c. buttermilk or milk soured with a bit of vinegar
1 1/2 c. diced rhubarb

Topping:
1 TBSP melted margarine
1/3 c. white sugar
1 tsp. cinnamon

Directions:
Directions:
Mix together flour, soda, baking powder and salt. In a separate bowl beat together brown sugar, oil, egg, vanilla and buttermilk with electric mixer. Add dry ingredients and stir until moistened. Stir in rhubarb. Combine topping ingredients and sprinkle about 1 tsp. on the top of each muffin. Bake at 400 for 20-25 minutes.
