1 cucumber, chopped 1 stalk celery, chopped 1 scallion, chopped 1 -2 tomatoes, chopped 1 Tbsp. olive oil 1 box of bulgar (a type of wheat) 1/3 c. lemon juice fresh mint (opt.) salt to taste water
Cover bulgar with water just enough to cover and soak for about 15 min. or until doubled in size. Mix rest of ingredients in a large bowl. Drain the bulgar and add to mixture. Stir together and let chill until ready to serve.
