Fish:
1/2 c. flour
1 egg, lightly beaten
1 c. crushed macadamia nuts
2 tilapia fillets (about 3-4 oz. each)

Salsa:
1 c. finely chopped fresh pineapple
1 T. minced red onion
1/2 jalapeņo, seeds removed, diced
1/4 c. minced fresh cilantro
salt and pepper

Directions:
Directions:
Preheat oven to 400.

Put flour, egg, and nuts in 3 separate shallow dishes. Dredge each fillet first in flour, then egg, then nuts. Place on oiled baking sheet. Bake about 12 minutes, until golden brown.

While fish is baking, make the salsa. Combine pineapple, onion, jalapeņo, and cilantro. Season with salt and pepper. Serve over the fish.
