2/3 Sweet Italian Sausage
1/3 ground beef

chopped onion
salt
pepper
fennel
minced garlic - 2 spoons
eggplant - sliced in 1/2" thick cubes

15 oz can of tomato sauce
1/3 of tomato sauce can of water

pasta - any kind

Directions:
Directions:
Brown ground beef and sausage in the ratio of 1/3 and 2/3 until almost done in skillet. Drain.

Add to skillet and stir together chopped onion, salt, pepper, fennel, garlic and eggplant. Amounts are according to taste. Add tomato sauce and water. Place lid and simmer.

Prepare pasta according to package directions. Drain and add a little olive oil to keep pasta separate. Place on plate and add mixture above. Serve

Trip was Mike's best man at our wedding and a dear friend of ours and a fabulous cook! Everything above is dependent on how many people you are cooking for and your taste. So, it's a great recipe to experiment with!
