This recipe for Basil Chicken Salad, by Rachel and Mike, is from Treasured Memories,

1/4 c plus 2 tbsp nonfat mayonnaise 2 tbsp lemon juice 2 tsp Dijon mustard 1/4 tsp hot sauce 18 tsp white pepper 3 c chopped cooked chicken 1/2 c chopped celery 1/4 c chopped green onions 1/4 c shredded fresh basil 6 c shredded spinach 1 1/2 tbsp pine nuts, toasted
Combine first 5 ingredients. Stir well. Combine chicken, celery, green onions and basil in separate medium sized bowl. Add mayonnaise mixture and toss.
Place 1 c spinach on each plate. Spoon chicken mixture on top and sprinkle with pine nuts. Serve
