2 c whole wheat flour or whole wheat pastry flour 1/2 c agave nectar 1 tble baking powder 1/2 teas. baking soda 1/2 teas. salt 1/2 teas. cinnamon 1/4 teas. pumpkin pie spice 1 1/2 c cooked, mashed yams 1/4 c water 1/2 c raisins or dried cranberries
Preheat oven to 375 Mix flour, sugar, baking powder, baking soda, salt, cinnammon, and pumpkin pie spice. Add yams, water,and raisins/cranberries and stir until just mixed. Lightly spray muffin cups and fill to the top with batter. Bake for 25-30 min. Let stand 1-2 min. before removing from pan.
