Ingredients:  
1/2" thick watermelon wedges
1 chopped fresh red onion
4 oz. crumbled feta cheese
freshly ground pepper
olive oil

Directions:
Directions:
Place 2 watermelon wedges on each salad plate or assemble on a large platter.
Combine chopped onion and feta with enough olive oil to moisten, season with black pepper.
Place a generous spoonful of the mixture on each wedge and chill.
Just before serving drizzle with extra olive oil and grind more black pepper on each serving.
