4 quail
3 tbsp. butter
1/4 c. strong chicken broth
1/4 c. dry white wine
2 oz. Armagnac
1 c. seedless grapes
4 slices toast
salt & freshly ground pepper

Directions:
Directions:
Melt the butter in a skillet & brown the quail on all sides. Season them with salt & pepper; add broth & wine. Cover the pan & simmer gently for about 10 minutes.

Remove the cover, pour warmed Armagnac over the quail and ignite it. Add the grapes, cover the pan, & continue to simmer for a few minutes, or until birds are well done.

Place each quail on a toasted bread slice. Pour the pan juices and grapes over them.
