Ingredients:  
3 whole boneless chicken breasts, cut into 1 inch cubes.

Marinade:

2 Tbsp soy sauce
1 Tbsp cooking wine
Few drops of sesame oil
2 Tbsp flour
2 Tbsp cornstarch
2 Tbsp water
1/4 tsp baking powder
1/4 tsp baking soda
1 tsp vegetable oil


Mix the marinade, stir in chicken pieces, and marinade at least 20 minutes.


Sauce for Sesame Chicken:

1/2 c. water
1 c. chicken broth
1/8 c vinegar
1/4 c cornstarch
1 c sugar
2 Tbsp soy sauce
2 Tbsp sesame oil
1 tsp chili powder
1 clove minced garlic
2 T. toasted sesame seeds

Directions:

Toast 2 Tbsp sesame seeds on baking sheet in oven on 325° for about 12-15 minutes, until brown and fragrant. Cool.

Mix all together in a small pot and bring to a boil, stirring constantly. Cover, turn down heat to low, and keep warm while you are deep-frying the chicken.

To deep fry the chicken, heat 3 ½ c vegetable or peanut oil until hot. Add the marinated chicken pieces a few at a time, turning quickly to prevent sticking to pan. Fry until golden brown. Drain on paper towels. Repeat with the remainder of the chicken.

Just before you are finished deep-frying, bring the sauce back up to a boil. Place the chicken on a large platter and pour the sauce over. Sprinkle with a few sesame seeds. Serve the Sesame Chicken with rice.
