1 tsp oregano leaves
1/4 C chopped mint
1 C chopped parsley
3/4 C olive oil
1 garlic clove
1 Tbl drained capers
1/2 lemon

Directions:
Directions:
Using a mortar and pestle pound the herbs into a paste. Work in some olive oil, and transfer to a bowl. Pound the garlic and capers and add to the herbs. Add remaining oil, pepper, squeeze of lemon and salt.
