2 lbs squash, zucchini and yellow squash
1 1/2 cups fresh breadcrumbs
3 Tbl butter
3/4 cup sliced shallots
1 tsp minced garlic
1 Tbl thyme leaves
1/2 C green salsa (see recipe)
1 C grated gruyere

Directions:
Directions:
Preheat oven to 400 degrees.
Cut the squash into 1/8 inch slices. toss them in a bowl with 1 tsp kosher salt and let sit 10 minutes.
Place breadcrumbs in a bowl. melt butter until it is brown and nutty flavored, then pour over the breadcrumbs.
Drain the squash and transfer to a large bowl. Add the shallots, minced garlic, thyme, 1/2 cup green salsa, and pepper. toss to combine and add the cheese and half the buttered breadcrumbs. Toss.
Place the squash in a 9X9 gratin dish. Scatter the remaining breadcrumbs over the top and bake for 35-40 minutes until it is crispy.
