Bluefish Club Sandwich Recipe

4 skinless bluefish fillets
1/2 cup mayonnaise
8 slices smoked bacon
8 slices portuguese bread
1/2 lemon
1/2 red onion
1 large avocado
small bunch arugula
1 tomato, sliced

Preheat broiler
Place fish in the center of an oiled baking sheet. season fish with salt and pepper, then spread one tablespoon mayo on each fillet. Spread bacon on top of fish. Put baking sheet under the broiler until bacon is crisp and fish is cooked through about 7 minutes.
Toast 8 slices of bread. Spread mayo on the bread
Sprinkle the bluefish with lemon, then assemble sandwiches: one piece of bluefish/bacon on a piece of toast, top with sliced red onion, then avocado, then arugula, tomato, and the next piece of toast.
Eat while still warm.
