1 can pink salmon
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. lemon juice
8 saltines, finely crushed
2 eggs, slightly beaten
1/4 cup milk
2 Tbsp. butter

Directions:
Directions:
Preheat skillet over med. heat. Flake salmon and add salt, pepper, lemon juice, cracker crumbs, eggs and milk. Shape into patties. Melt shortening and fry patties until golden brown on both sides.

A Friday night favorite of Mother's back in the 'old days' of no meat on Fridays. She served them with mashed potatoes and creamed corn.
