1 cup heavy cream
2 (6oz) containers vanilla yogurt
1/4 cup strawberry preserves
1/4 tsp unflavored gelatin
1 tsp water
1 Tbsp lemon juice
1 tsp lemon zest
3 Tbs confectioners' sugar

Directions:
Directions:
1. In a medium bowl, using an electric mixer, beat the heavy cream at high speed until firm, about 2 minutes. Add the yogurt and beat just until combined. Transfer half of the mixture to another bowl and fold in the strawberry preserves.
2. In a small microwave safe bowl, sprinkle the gelatin over the water. Microwave the gelatin for 5 seconds. Add the gelatin to the plain whipped cream mixture along with the lemon juice, zest and sugar and beat at medium speed until combined.
3. Spoon half of the lemon cream into 2 wineglasses and top with half of the strawberry cream. Repeat layer. Refrigerate 30 minutes before serving.
