2 c. All-Purpose Flour
1 1/2 c. Sugar
3 tsp. Baking Powder
1 tsp. Salt
1 c. Milk
1/4 c. Shortening
4 Egg Whites
2 tsp. Vanilla or 1/2 tsp. Almond Flavoring

Directions:
Directions:
Preheat oven to 350ºF. Generously grease and flour bottom of two 8 or 9 inch round cake pans or you may also use a 13 x 9 inch pan.
In Large mixing bowl, combine the first six ingredients. (lightly spooning flour into measuring cup and leveling off before adding to mixing bowl) Blend at low speed until moistened; Add the egg whites and the vanilla or the almond flavoring and beat 2 more minutes at medium speed. Pour batter into prepared pans. Bake layers for 30-35 minutes or the 13 x 9 in. pan for 35-40 minutes until a toothpick inserted in the center comes out clean. Cool layers 10 minutes; remove from pans. Cool completely; frost with your favorite frosting recipe...
