1 6-8 lb leg of lamb, boned & butterflied
1 cup orange marmalade
4 tbl fresh chives, chopped
1 c dry red wine
2/3 c fresh mint leaves, chopped
(can use dried, only less)
salt & pepper

Directions:
Directions:
Sprinkle inner surface of lamb with salt & pepper.

Combine all the rest of the ingredients and marinade for several hours, turning occasionally.

Grill like steak, only coals should not be quite so hot, about 12 minutes on each side. Brush sauce over while cooking. Meat should be pink.
