1 package of Arugula 1 ripe avocado Block of locatelli-romano cheese garlic pepper Julia Child's vinaigrette (in food processor)
1 tsp shallots 1 tsp red wine vinegar 1 tsp dijon mustard 1 tsp lemon juice 1/2 c. olive oil mix in food processor
Plave arugula in a shallow bowl. Slice avocado in half moon shapes over it. Slice thin pieces of locatelli-romano cheese over the salad. When ready to serve toss with Julia Child's vinaigrette. Serves six.Yum!
