Spanish Rice Recipe

1 c. rice
1/2 c. onion, chopped
2 Tbsp. butter
1 (8oz.) tomato sauce
1 clove garlic, minced
3 c. water

Directions:
Directions:
In a heavy sauce pan saute onions in butter, then add rice and stir to brown. Add the rest of the ingredients, bring to a boil. Turn heat down to simmer and cook 45 min. or until water is absorbed. Add shrimp peas, ham, etc..
To increase, add only 1 1/2 c. more water to every 1 c. of rice. I also love to add a scoop of salsa during cooking.
Rice Cooker: Put butter into rice cooker and turn on. Melt, and add the rice and onion, stir until sizzling or browning. Add the rest of the ingredients and follow rice cooker instructions.

*Judy Cooper addition: In an oiled skillet, add rice and fry to your liking. This adds an extra crunch and also helps absorb more of the sauces.
