1 lb boneless chicken breasts, cut into bite sized pieces
1 10-12 oz. package of fresh mushrooms, sliced
2 cloves of garlic, finely minced
1 medium onion, thinly sliced
2-3 tablespoons lemon juice
1 ¾ cups dry white wine
2 packets low-sodium instant chicken bouillon
Salt and freshly ground pepper, to taste
2 tablespoons corn starch
2 tablespoon olive oil

Heat olive oil in a large, heavy skillet over medium high heat. Stir and saute chicken until it is brown, about 10 minutes. Lower the heat to medium. Add mushrooms, garlic and onions. Stir and cook until onions soften and become translucent. Salt and pepper the mixture to taste, and add bouillon, lemon juice and 1 1/4 cups of the wine. Continue to cook and stir over medium heat until it comes to a boil. Reduce heat, cover and simmer for about 20 minutes, stirring occasionally. Mix the 2 tablespoons of corn starch with the remaining 1/2 cup of wine. Pour slowly into the chicken mixture and raise the heat slightly, stirring constantly until it returns to a boil. Continue to stir and cook until the gravy has thickened. Serve over rice or noodles.
