2 tbsp. butter or oil
1 can healthy choice tomato soup with herbs
3 tsp. of curry
1 tsp. chili-garlic paste
1 apple, peeled and diced
1/2 C yellow raisins
1 green pepper, diced
2 small sweet onions
1/2 C jicama root, diced (optional)
1 can water
2 C cooked lamb, diced
cooked rice

Directions:
Directions:
1. Heat the oil in a large frying pan. Add the curry and stir around a bit. Add the onions, peppers and jicama. Cook over medium heat until tender.
2. Add the apples, raisins and chili-garlic paste and soup with the can of water. Cook until raisins plump up, then add the lamb.
3. Serve hot over plain rice.
