5 hard boiled egg yolks (sieved)
3/4 c. sugar
1 c. butter
1 tsp. lemon jc.
1 tsp. lemon zest
1 egg mixed with 1 tsp. milk
1/2 tsp. salt
2 c. flour, sifted

Directions:
Directions:
Cream sugar with butter. Stir in hard boiled egg yolks (sieved), lemon jc., zest and flour mixed with salt. Chill the dough.

Roll out dough on a floured cloth approximately 1/4 inch thick. Cut into various small shapes. Place on a lightly greased cookie sheet. Glaze with beaten egg and milk. Bake 12 minutes in a 350 degree oven.

This is an attempt to replicate Helena's cookie recipe. It is now in the testing stage and may be changed in future cookbooks.

Using vanilla or other flavors in place of the lemon jc and zest gives this easy cookie a variety of delights.
