Pastry for 2 crust pie
5+ cups of pitted fresh tart cherries
1 cup sugar
1/4 cup flour
1/8 tsp salt
small amount of margarine

Directions:
Directions:
Wash and pit the cherries.
Combine sugar, flour, and salt and mix with the pitted cherries.
Pour into the bottom pie shell, dot sparingly with margarine, and cover with the top crust, or make a lattice crust.
Bake at 400-425 for about 45 minutes.

If you have pitted and frozen the cherries ahead of time, use 1/3 cup flour instead of 1/4 cup.

Taste a few cherries as you pit them; if they are REALLY tart, use more sugar.

The edges of the crust will tend to brown too much. After about 15 minutes, cover the edges with a strip of aluminum foil.
