1 lb tenderloin or sirloin
2 tbsp salad oil
1/2 c beef broth
2 tbsp sugar
1/3 c soy sauce or teriyaki sauce
1/3 lb mushrooms, sliced thin
1 bunch green onions, cut into 1 1/2" pieces
3 stalks celery, diagonally sliced
1 can (5 oz) bamboo shoots, drained
3 c fresh spinach or can of chow main mix vegetables

Cut meat into about 1/4" thick, 2" long strips. In large skillet, heat oil and brown meat. Push meat to one side of the skillet (or remove from skillet). Stir in broth, sugar, and soy sauce. Place mushrooms, onions, celery, and bamboo shoots in pan and cover. Simmer for 10 minutes. Add spinach and simmer for 5 minutes. Stir in beef.
