"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Fake Pineapple (Zucchini), by Karen Cook, is from 'Cooking With Harmony' 2nd Edition,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
4 qts. grated or diced zucchini 1 1/2 Cups lemon juice 1 46 oz can unsweetened pineapple juice 3 Cups sugar
Remove peeling and seeds from zucchini. Grate or dice. Mix all ingredients thoroughly and simmer 20 minutes. Stir frequently. Pour hot zucchini mixture into clean, sterilized pint jars and seal. Process 30 minutes in boiling water bath.
Note: Recommended as a way to take care of extra zucchini when it is plentiful. Use a jar of the "pineapple" in your recipe for zucchini bread when it is not in season. Delicious!!
