2 - 2 lb fryers
1 1/2 tsp salt
3 c water
2 tbsp margarine
1/2 c sliced green olives
1/2 c diced green peppers
1/4 c finely chopped onions
1 clove garlic, pureed
1/2 tsp salt
1/4 tsp pepper
1 tbsp vinegar
2 1/2 tbsp corn starch

Directions:
Directions:
Cut chicken into serving pieces and place in a large saucepan with water and 1 1/2 teaspoons salt. Cover and simmer gently for 30 to 40 minutes, until chicken is tender.
Preheat oven to 350 degrees.
Saute green olives, green peppers, onions, and garlic in butter for 5 to 10 minutes, until the vegetables are soft. Add salt, pepper, and vinegar. In a bowl, measure the corn starch and gradually stir in 2 cups of the chicken broth strained from the chicken. Add to the vegetables. Cook, stirring constantly, until sauce thickens slightly.
Place chicken in a single layer in a shallow baking pan. Pour sauce over top. Bake for 30 minutes.
