2-3 chicken breasts
2 cups uncooked brown rice
1 can diced tomatoes & jalapeños (rotel)
1 can black beans
1/2 cup of taco seasoning (see note)
shredded cheese (opt)
GF sour cream (opt)

Directions:
Directions:
Bake chicken breast in oven at 350º until fully cooked. Cook brown rice according to instructions on package, adding can of tomatoes & jalapeños. Remove baked chicken from oven and slice or dice. Place in skillet and season with taco seasoning. Heat black beans. To serve, place a spoonful of rice in a bowl, top with beans, then chicken. Top with cheese and sour cream, if desired.
