1 small can mandarin oranges
1/4 cup vinegar
1/2 cup olive oil
1 tablespoon poupon mustard

I like to use this dressing on a salad of butter lettuce, avocado, green onions and sliced mushrooms. You can also add chopped chicken, cold salmon, or tuna.

Add the oranges to the tossed greens. Save the syrup for the dressing. Mix the vinegar, oil and mustard. Add the syrup for sweetness. Add salt and pepper to taste. You can alter the amounts if too vinegary, sweet or sour. The dressing can also be fairly low in fat if you go easy on the olive oil.
