Ingredients: Cake: 9" 10" 12" Semi Sweet Choc. 7 oz 9 oz 11 oz Unsalted butter 1/4 lb 1/4 lb+2T 3/4 cup Eggs separated 7 9 11 Sugar (white) 1 cup 1 1/4 c 1 1/2 c Vanilla Extract 1 tsp 1 1/4 tsp 1 1/2 tsp Cr. of tartar 1/8 tsp 1/4 tsp 3/8 tsp Frosting: Whipping Cream 1 cup 1 1/4 c 1 1/2 c Powdered Sugar 1/3 c 1/3 c 1/3 c Vanilla Extract 1 tsp 1 1/4 tsp 1 1/2 tsp

Directions:Preheat oven 325º - Use a small sauce pan, melt chocolate & butter cover low heat. Large bowl - beat egg yolks & 3/4 cup sugar until very light & fluffy, gradually beat in warm choc & vanilla mixture. In another large bowl beat cream of tartar & egg whites until soft peaks form(no metal bowls). Add remaining 1/4 c of sugar- 1 T at a time. Continue beating until stiff. Fold egg whites carefully into choc. mixture. Pour 3/4 of batter into UNGREASED spring form pan. Cover remaining & refrigerate. BAKE cake for 35 min.
Remove cake from oven & COOL -center cake will drop when cool - remove outside ring of pan. Stir refrigerated batter to soften slightly. Spread on top of cake refrigerate until firm.
Frosting: Beat whipping cream, powdered sugar & vanilla until soft peaks form. Beat until stiff. Spread over top & sides - garnish with grated chocolate. Refrigerate several hours or overnight- may be frozen |
