1/2 cup raisins
2 Tble. red wine
1/2 c apple juice
3/4 lb. boneless, skinless chicken breasts, dicience
2 green apples, diced
2 tsp. grated lemon zest
2 tsp lemon juice
2 stalks celery, chopped
1/2 cup walnut or pecan halves, toasted
2 Tble low-fact plain yogurt
2 Tble low-fat mayonnaise
1 bunch romaine or mixed lettuce, torn
(Optional): white Stilton cheese with dried fruit

Directions:
Directions:
Place the raisins, wine and apple juice in a large saucepan and bring to a boil educe heat, add the chicken, cover and simmer for 10 to 15 minutes or until cooked. drain and discard liquid.
Place the apples, lemon zest and lemon juice, celery and nuts in a bow and toss to combine. Combine the yogurt and mayonnaise and toss with the apple mixture. Arrange the lettuce in a bowl or on 6 plates wop with the apple mixture and spoon over the chicken and raisins.

To toast nuts (I don't), heat dry skillet over medium heat until they start to brown. Be careful not to scorch!
I personally think the Stilton cheese kicks it up a notch!
