3doz.cleaned and scrubbed mussels
1-1/2tsp minced garlic
3Tbs olive oil
3-4 fresh Roma tomatoes peeled and chopped
1tsp. oregano
1Tbs butter
3/4 C.dry white wine
2Tbs.minced parsley
1/4tsp red pepper flakes
1 C. clam juice

Directions:
Directions:
Heat olive oil in a 2-quart deep sauce pan. Add mussels and tomatoes. Cook 3-4minutes.Add garlic;remove from heat. Let stand 2-3 min. Place back on heat,reduce pan with wine. add parsley,butter,oregano and red pepper flakes. Cook 2-3 more minutes. Add 1/2 cup clam juice and reduce 1 more minute. Place in large serving bowl and serve hot.
