1 15oz container ricotta cheese
1 can crushed pineapple, drained
1 egg
2 caps vanilla extract
6 pkgs sweet & low
1 pkg unflavored gelatin
1/2 c pineapple juice
1 tbsp lemon juice
pinch of salt
cinnamon

Directions:
Directions:
Preheat oven to 350 degrees.
Combine ricotta cheese, crushed pineapple, egg, vanilla, sweet & low, and salt, beating until very smooth. Soften gelatin in the pineapple juice and lemon juice. Mix into cheese mixture.
Pour into a pan. Sprinkle with cinnamon. Bake for 35 minutes. Cool for 1/2 hour, then refrigerate for 4 to 5 hours or overnight.
