1/2 c each of minced onions & butter
2/3 c flour
1 tsp each of dry mustard, paprika, salt
1/8 tsp cayenne pepper
1 (10 oz) can of chicken broth. 4 c. milk
1(12oz) can beer
3 c finely shredded sharp cheddar cheese

Directions:
In large kettle, cook onion in butter until soft. Blend in the flour and seasoning's, gradually stir in broth, milk and beer. Cook over moderate heat stirring constantly until mixture comes to a boil and thickens. Add cheese and heat until smooth. Can be garnished with popcorn, bacon, chives or croutons.
