1 med. onion, finely chopped
2 tsp. unsalted butter
2 c. chicken broth
2/3 c. Uncle Ben's converted rice
1 c. fresh or frozen peas
1 tbsp. parmesan
pepper to taste

Directions:
Directions:
Saute onion turning frequently until tender - not brown - add broth, bring to a boil. Stir in rice & peas. Cover, reduce heat & simmer 20 minutes. Remove from heat & let stand 5 minutes until all liquiid is absorbed. Stir in cheese & pepper.
