Spinach & Feta Pasta Salad Recipe

16 oz. fresh spinach
1/2 medium onion, diced
1-2 cloves of garlic, minced (more if you love garlic like me)
8 oz. Feta cheese
1/2 cup Extra Virgin Olive Oil
1/2 box Shell or Rotini Pasta (8-10 oz.)
2 tbsp Dill weed
1 tbsp Oregano
3-4 tbsp lemon juice
1 tbsp fresh parsley, chopped (optional)

Cook pasta according to directions, drain and set aside to cool. Rinse spinach thoroughly then put in a large microwavable bowl, sprinkle 2 tbsp of water over it, cover and microwave about 2 minutes or until blanched to your liking. Let spinach cool then squeeze excess water out of it and finely chop it up. In a large mixing bowl, sprinkle in a tbsp of olive oil then about 1/2 the spinach and 1/2 the onion and garlic. Toss around with large spoon until most of it is coated with the oil. Put in half the feta cheese and half the pasta and continue stirring. Add in half the dill and oregano. Add rest of Spinach, onion, garlic, cheese, oil and pasta, lightly stirring as you add things in. Sprinkle in lemon juice. Stir around a bit more to blend it all in. Cover with plastic wrap and chill in refrigerator for at least a few hours before serving (overnight is even better). Before serving, stir it all up again and optionally sprinkle chopped parsley around the top.
