1 box jasmine rice
1 lb boneless, skinless chicken breast, diced
2 tbsp sesame oil
vegetable oil
2 cloves garlic, minced & mashed
2 tbsp (glubs) rice wine vinegar
1 large carrot, diced
1 red bell pepper, diced
1 green bell pepper, diced
3 heaping tbsp hoisen sauce
unsalted cashews
scallions
pineapple (optional)

combine chicken in 1 tbsp sesame oil, garlic, vinegar and let sit to marinade. In a wok, heat vegetable oil until it smokes. Add sesame oil and carrot. Cook 2-3 minutes. Add the coated chicken and cook 3-4 minutes. Toss in red and green pepper. Add hoisen sauce and coat evenly. Add cashews and scallions near end of cooking. Sometimes I like to add in some cut pineapple too. Dump chicken and veggie mix over rice - Yum-oh!
