1/2 lb boiled macaroni
8-10 oz. sharp cheddar cheese, grated
2 cups very hot (scalded) milk
1/4 cup butter
1/4 cup flour
1/2 tsp. salt
1/4 tsp. pepper
14.5 oz. can diced tomatoes, drained well

Directions:
Directions:
Melt butter in large sauce pan over low heat. Add flour, stirring constantly. Gradually stir in hot milk and cook, stirring constantly until mixture thickens. If there are any lumps, beat with a whisk. Add salt, pepper and cheddar cheese, reserving 1 cup of cheese. Stir until cheese is melted and incorporated into white sauce. Stir in drained, diced tomatoes and cooked macaroni. Pour into greased casserole and top with remaining cheese. Bake in preheated 375 oven until it is bubbling and the top is browning around the edges, about 30 minutes.
