2 cups grated zucchini
1/2 cup grated romano cheese
1/2 cup chopped onion
2 beaten eggs
1 cup Bisquick
1/2 teaspoon salt
1/2 cup vegetable oil

Directions:
Directions:
Heat oven to 350º. grease muffin pan (I prefer mini muffins) or 9 inch pie plate. Comine all ingredients and mix well. Spoon into muffin pan.
Bake about 40 minutes or until golden brown.
Let cool 5 minutes.
Best eaten hot, but also can eat cool.
great to bring to picnics. Can microwave to reheat.
