Sweet Potato Casserole Recipe

4 medium sweet potatoes, peeled and sliced
of a large sweet onion, sliced
3 small apples, peeled and sliced
1 can cream of chicken soup
1 C fat free and
8 oz. low fat cream cheese
Salt and pepper to taste

1.In a large pot, cook onions in a little olive oil until soft.
2.Add the soup, and and cream cheese and bring to boil over medium heat.
3.Add sliced sweet potatoes, stir and cover. Cook until tender-crisp.
4.Add the apples and stir. Cover and turn off heat.
5.When cool add salt and pepper, pour into casserole and cover with foil.
6.At this point you can refrigerate until needed.
7.Remove from refrigerator and let warm on counter for 1 hour or more.
8.Bake with foil cover at 375 degrees about an hour. Uncover and bake 15 minutes or more until liquid is absorbed.
9.Serve with meat or fish or with a hearty bread for a vegetarian meal.
