Pork:
1/2 c. Dijon mustard
2 T. olive oil
2 tsp. thyme
2 tsp. rosemary
2-3 lbs. pork tenderloin

Gorgonzola Gravy:
1 c. whipping cream
1/4 c. dry white wine
1/4 c. low-salt chicken broth
1 c. crumbled gorgonzola
1 T. butter
1 T. flour

Pork:
Preheat oven to 425F. Whisk Dijon mustard, olive oil, thyme and rosemary in small bowl. Salt and pepper pork tenderloin. Heat a large nonstick skillet over high heat. Add pork and sear, turning about 10 minutes. Transfer seared pork to an oiled baking sheet and brush with mustard mixture.

Gorgonzola Gravy:
Melt butter in a small saucepan over medium heat. Add flour and whisk for 1 minute. Whisk in whipping cream, wine and chicken broth. Bring to a boil. When gravy thickens add gorgonzola and whisk until smooth.
