4 Skinless Chicken Breasts
2/3 c. shelled pistachios, finely ground
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. olive oil
lemon wedges

Directions:
Directions:
Preheat oven to 400º.

In shallow dish combine nuts, salt and pepper.

Press both sides of chicken in nut mixture.

Heat oil in non-stick skillet, Add chicken and cook over medium high heat 2 minutes per side.

Transfer to baking dish. Bake 12 - 15 minutes. Serve with lemon wedges.
