Sesame oil ... Enough to cover bottom of pan.
Chicken wings ... Around two wings per person
Garlic ... 10 or so cloves per person, to taste
Ginger ... Sliced in discs, 1/4 c per person
Hot peppers ... 1 per person,or to taste
Sugar ... 1 tbsp per person
Basil leaves ... 3/4-1c (loose) per person. It will seem like too much but it's not!
Soy sauce ... 1/2 tbsp per person
Rice wine (Chinese cooking wine) ... 1 tbsp per person

Directions:
Separate chicken wing parts. Sautee in the sesame oil in wok or large pan over medium high heat until browned. Add ginger and cook until ginger starts to brown. Add garlic and peppers, turn to low heat. Add sugar, cook about two minutes. Add soy sauce, cook two minutes. Add rice wine and basil. Cook until basil is just cooked. Adjust flavors with sugar and soy sauce as needed. Serve with white rice.
