2 c. yellow cornmeal
1 T. salt
1 tsp. baking soda
6 eggs
2 med. onions, chopped
1/2 c. jalapenos, diced
1 lb. Cheddar cheese, grated
2/3 c. oil
2 (16-oz.) Cream Style corn
2 lb. LOUISIANA CRAWFISH TAILS, lightly rinsed

In a lg. mixing bowl, combine cornmeal, salt, and soda. In med. bowl, beat eggs thoroughly. Add onions, peppers, cheese, oil, corn and crawfish to beaten eggs. Combine this mixture with cornmeal mixture and mix well. Pour into a greased 12" x 14" baking dish. Bake at 375 º for 55 min. or until golden brown.
