6 medium potatoes
2 cups shredded cheddar cheese
1/4 cup butter
1 1/2 cups sour cream
1/3 cup chopped green onions
1/4 tsp pepper
2 Tbsp butter

Directions:
Directions:
Cook potatoes in skins. Cool. Peel and shred coarsely. In saucepan over low heat, melt butter and stir in cheese. Remove from heat and blend in sour cream, onions, salt and pepper. Fold in potatoes and turn into greased 2-quart casserole. Dot with 2 Tbsp butter. Bake 350 for 35 minutes. Serves 8. I don't usually bother with the 2 Tbsp butter on top. This is kind of a glorified mashed potato dish, but you're not mashing at the last minute. (I know this is a lot like the other potato recipe I submitted, but this one is a bit more elegant.)
