1 pound fresh tomatoes, seeded and chopped
3/4 cup lightly packed and chopped arugula, basil or Italian parsley
1/4 - 1/2 cup olive oil
1 shallot, chopped fine
1 1/2 T. fresh lemon juice
1 T. drained capers

Directions:
Directions:
Combine all ingredients. Season with salt and pepper to taste. Serve with grilled salmon or any of your favorite fish.

It's easy to adjust the quantity of this recipe - just be sure to use the best tomatoes you can find. You can also use a combination of the three "greens", if you prefer. Yummy!
